Could you please tell me how to change variable from country_iso to province?

Let's say you have Flava theme and you want to change colors of flavalicious.

1. Create a new style

Admin Panel -> Extensions -> Themes -> Create Style

These are the settings:

Parent Theme: Flava
Parent Style: Flavalicious (this can also be phpfox default)
Name: mystyle
Folder Name: mystyle (this should not be an existing style or folder name)
Logo image: logo.png
Is Default: No
Is Active: Yes

2. Create the folder of your newly created style

Using your FTP client, create a new directory
- theme/frontend/tti_flava/style/mystyle

Then copy all content of this folder into your newly created folder/style
- theme/frontend/tti_flava/style/flavalicious

3. Set the default style

- Login to your admin panel and go to "Extensions" >> "Themes" >> "Manage Themes"
- View the styles of your preferred theme.
- Click on the "red button" of the selected style, or you can click on the "arrow down" and choose "set as default".

FINISH

Now you have your own flava style this is very useful when editing so that when you update your css changes are not affected.
